Summer is the best time to experiment with delicious fresh veggies! This idea has been ingrained in me by my mother, who always offered watermelon, squash and strawberries to her daughters as summer treats.
Inspired by all things summer and my mother's amazing sweet potato mash recipe, I decided to create the perfect seafood summer dish. Well at least perfect for me!
Ingredients:
1/4 Calabash Squash, cubed
1 Small Sweet Potato, cubed
1/2 Yellow Onion diced
2 cloves Garlic, minced
1/2 lb. Large White Shrimp
1 Roma Tomato
1 Zucchini
2 Tablespoon Lemon Juice
Salt
Pepper
1 1/2 cup vegetable broth
Preheat oven to 450°. Rinse produce. Clean and peel fresh shrimp. Place into medium bowl and toss with lemon juice and a dash of salt and pepper.
Peel and dice onion. Peel and mice garlic. Peel and dice both the sweet potato and squash. Set these ingredients aside.
Cut zucchini in half, then slice each section length wise. Slice the tomato length and widthwise, creating small triangular sections. Place sliced vegetables into a medium bowl. Drizzle with olive oil. Toss ingredients and season lightly with salt an pepper. Place coated zucchini and tomatoes onto a cooking sheet layered with parchment paper.
Once oven is heated, place tray of tomato and zucchini into the oven for 15 - 20 minutes. Once done, remove from oven set aside.
Meanwhile, heat 2 tablespoons of olive oil in a pan before adding in the squash, onion, garlic and sweet potato. Cook for 3 - 4 minutes. Add vegetable broth to pan of vegetables and simmer for 15 minutes.
Remove finished cooked vegetables from heat and strain, leaving 1/4 cup broth liquid. Transfer vegetables to medium mixing bowl. Wash out pan. Mash ingredients together adding broth liquid as needed for consistency. Set mashed veggies in warm location.
In the same pan used to boil the vegetables, heat 2 tablespoons of olive oil. Add shrimp into heated pan and cook until pink ( about 5 minutes ). Towards the end of the cooking process add lemon juice for additional flavor. Remove shrimp from pan.
Now it's time to plate! Place mashed veggies onto your serving plate topped with the roasted veggies and shrimp.
